Low Carb and Low Glycemic Sola Company Food Options

Have you ever taken a look at the amount of sugar in your food? I recently did and was shocked!! A lot of the foods we eat are overly processed with large amounts of added sugar and processed carbohydrates.

Even some of the food brands we think are healthy, unfortunately, they may not be as good for us as we think. I’m super excited to be partnering up with a local Houston based brand, SOLA®  Company. To learn more about their products and how they can benefit a healthier lifestyle, and wanted to share some of their products with you today along with a recipe I made using one of SOLA®’s products.

The SOLA® company has an entire line of low-carb, keto-friendly and low glycemic foods. Foods like ice cream, bread, granola, nut bars and a patent pending low calorie sweetener. SOLA® offers healthier alternatives to some of our favorite foods, without losing any of the deliciousness and flavor we enjoy!

I used the SOLA®  low calorie sweetener to make the No-Bake Truffle recipe below. You can use SOLA® sweetener in any recipe that requires regular sugar.

These no-bake truffles are perfect for all of your Memorial Day or 4th of July celebrations coming up soon…..or really for any celebration 😉

No-Bake Truffle Recipe

Ingredients:

Ingredients

  • For the Truffles:
  • 1.5 c. flour
  • 1 c. yellow cake mix
  • 1/2 c. softened unsalted butter
  • 1/2 c. Sola low calorie sweetener
  • 1 tsp. vanilla
  • 1/8 tsp. salt
  • 3-4 tbsp. milk
  • For the Coating:
  • 16 oz. (8 squares) almond bark or vanilla flavored coating
  • 2 tbsp. red, white and blue sprinkles Sprinkles

Instructions

  1. Beat together Sola low calorie sweetener and butter using an electric mixer. Add cake mix, flour, salt, and vanilla and mix well. Add 3–4 tbsp. of milk (I used 3) if needed to make a dough consistency. Optional: you can add sprinkles if you like into the batter
  2. Roll mix into one-inch balls. Lay parchment or wax paper on a cookie sheet and lay balls on it. Chill balls in the refrigerator for 15 minutes to firm up.
  3. While dough balls are chilling, melt almond bark in the microwave in 30 second intervals, stir between intervals, until melted.
  4. Dip truffles into melted almond bark and gently twirl around to remove excess coating. Place truffle back on cookie sheet and top with sprinkles. Repeat with remaining balls until finished.
  5. Chill truffles in the refrigerator until ready to serve.
  6. Makes approximately 22-28 truffles.
